Mix
dry ingredients and set aside:
2
TBSP. Sugar
1
tsp. Salt
2
tsp. Baking powder
1
tsp. Baking soda
In a larger bowl, mix together 2 cups sourdough
starter, 2 egg yolks, 1 ½ TBSP vegetable oil, and ¼ cup buttermilk. Mix
thoroughly. Next fold in the dry ingredients and 2 egg whites that have
been beat until moderately stiff. Mix
thoroughly while not agitating the batter too much. The batter will foam. Cook cakes in a butter skillet on a
medium high heat. Turn when cake
begins to bubble. Serve with syrup,
bananas, chopped nuts and/or yogurt (plain, vanilla, or fruit flavored). |
